Red wine

harvest

100% hand harvest in crates. Manual sorting
Traditional vinification without sulfite, with wild yeasts.

15 days of maceration before pressing and malolactic fermentation in tank.
The wine is put into barrels, 15% new, highlighted heads with a little sulfur. Our French oak grained are produced by four coopers.
Maturing in our underground cellars.
The wines are bottled naturally without fining or filtration.

White wine

100% hand harvest in crates. Vibrating table tray and manual sorting.
Very gentle pressing, pneumatic, one long pressed.
Fermentation with bio yeast about three weeks. Batonnage in tank.
Bottling at the beginning of the year following the harvest, without filtration.
Underground storage cellar at a temperature of 12 °.
